The signature finishing method

Four fractions. Four firing profiles. One balanced cup.

Instead of firing every leaf the same way, the partner tea maker separates four leaf-size fractions, applies a tailored heat profile to each, then recombines and tastes the finished tea.

    Separate

    The unfinished tea is divided into four fractions according to leaf size and character.

  2. 02

    Tailor the heat

    Larger aromatic leaf receives stronger heat; finer fractions are fired more gently to retain deep green colour.

  3. 03

    Recombine

    The four finished fractions are brought back together to balance aroma, colour, body and finish.

  4. 04

    Taste every year

    Heat is adjusted to each harvest, comparing the tea before and after firing for consistent character.

Why Oku-Yame tastes gentler.

Oku-Yame lies among the headwaters of the Yabe and Hoshino rivers in southern Fukuoka. Clean mountain air, abundant water and pronounced day-to-night temperature changes shape its tea.

Morning mist and the surrounding mountains soften direct sunlight. The leaves mature gradually, supporting the mellow sweetness, deep umami and restrained astringency associated with Yame tea.

Nature provides the veil. The tea maker preserves what the leaf has gathered.

Organic, with traceable care. Selected Organic JAS products use tea from certified Kyushu fields and controlled handling through processing and packing. Certification, origin and availability are confirmed by SKU; it does not apply to the full collection.
